Rajasthani food from a chef who cooked for the Liz Hurley - Arun Nayar wedding. Come, see what the event probably tasted like.

Taj Banjara is hosting a Rajasthani Food Festival at its 24-hour coffee shop Waterside Cafe, from 5th to 13th February. Chef Chander Singh Rathore from Taj Hotels in Rajasthan has been specially flown down to serve Hyderabadis a taste of his authentic Rajasthani specialties.

The menu for the festival includes Kheechia, Murg Jail Kebab, Laal Maas, Machli Methi Bagaar, Machli Methi Bagaar, Hari Mirch Khatta, Chakki Ka Saag, Panch Koota Saag, Churma, Makhi Ka Sogra, Yakhni Pulao, Kalegi Raitha, Jahangiri Murg Shorba, Bhuni Mirch Ka Shorba, Galafu Seekh Kebabs, Jhinga Balkas Rubina, Jhinge Ka Sala and Kacche Yakhni Dum Ki Biryani. The festival also offers a range of desserts like Pista Kulfi, Rabari Ka Ladoo, Jalebi with Lacha Rabari, Daal Badam Chakki and Dal Ka Halwa.

Rajasthani cuisine is influenced by the extravagant lifestyle of the Rajput and Brahmin inhabitants, and the ingredients available in the arid region of Rajasthan. Rajasthanis relish ghee, which is an integral part of many of their preparations. The most famous dish is probably Dal-Bati, a spicy lentil with baked balls of wheat, eaten with lots of ghee. The variety of sweet dishes in the cuisine is also quite wide - sweets are relished as much as the spicy curries are.

Chef Chander Singh Rathore has 15 years of experience in the hospitality industry in various Taj properties including Taj Lake Palace, Ummaid Bhawan Palace and Taj Lands End. Chef Rathore was also behind the scenes at the kitchens of the famous Liz Hurley - Arun Nayar wedding in Ummaid Bhawan Palace.

The buffet is open for lunch from 12:30pm to 3pm, and dinner from 7:30pm to 11:45pm. Please contact 6676-9999 for further details.
